Highland honey is harvested by beekeepers who take their beehives to the plateaus in summer. Since the plateaus are mountainous and high, living conditions are difficult. The pollen density and aroma of plateaus is much more special than other honeys. Even though the plateaus are not visited much in the winter months, they are frequently visited in the summer months due to their clean climate and air.

Highland honeys are produced at the foot of the mountain in a completely natural environment and most importantly away from settlements. Thus, a 100% zero sugar honey emerges without being affected by the air pollution in the settlements. Bees that can reach hundreds of different flowers in the plateaus find the opportunity to feed from these hundreds of different flowers. In addition, clean water resources in the plateaus are also an important factor in honey production for bees.

Highland honeys are generally honeys of Eastern Anatolia Region in our country. The altitude of the real highland honey production area must be at least 1400 meters. Thus, the variety of flowers and natural water resources at this altitude and above can be different from other places.
